Pumpkin and Chicken Curry with Rice

Make the pumpkin curry ahead and warm it just before dinner to give the flavors and aromas a chance to meld.

Ingredients

  • 2 tablespoon olive oil

  • 1 pound skinless, boneless chicken breast halves, cut into thin strips

  • 1 medium onion, sliced (1 cup)

  • 1 tablespoon minced fresh ginger

  • 1 tablespoon minced garlic

  • 1 cup canned unsweetened light coconut milk

  • 1 cup canned pumpkin

  • 2 tablespoon curry powder

  • 1 ½ teaspoon garam masala

  • ½ teaspoon salt

  • ¼ teaspoon cayenne pepper

  • 3 cup packed baby spinach

  • 2 teaspoon fresh lime juice

  • 2 cup hot cooked basmati rice

  • cilantro, for topping

Directions

  1. In a large saucepan heat 1 Tbsp. of the olive oil over medium-high. Add the chicken; cook and stir 3 to 4 minutes or until no pink remains. Remove chicken from pan.

  2. Reduce heat to medium. Add remaining 1 Tbsp. olive oil and the onion to saucepan. Cook and stir 3 minutes. Add ginger and garlic. Cook and stir 2 minutes or until onion is tender.

  3. Stir in next six ingredients (through cayenne) and 1/2 cup water. Bring to boiling; reduce heat. Simmer, uncovered, over medium-low 10 minutes, stirring occasionally. Return chicken saucepan. Add spinach; cook and stir just until wilted. Stir in lime juice. Serve over rice.

Tips

Top each serving with chopped fresh cilantro for brightness.
