Add the chicken; cook and stir 3 to 4 minutes or until no pink remains. Remove chicken from pan. Reduce heat to medium. Add remaining 1 Tbsp. olive oil and the onion to saucepan. Cook and stir 3 minutes. Add ginger and garlic. Cook and stir 2 minutes or until onion is tender. Stir in next six ingredients (through cayenne) and 1/2 cup water. Bring to boiling; reduce heat. Simmer, uncovered, over medium-low 10 minutes, stirring occasionally. Return chicken saucepan. Add spinach; cook and stir just until wilted. Stir in lime juice. Serve over rice. Tips Top each serving with chopped fresh cilantro for brightness.
