Carefully separate sandwich cookies to keep filling intact on one side of the cookie. Discard cookie half without cream or save for another use.
Decorate cookie cream with red and green holiday toppers.
Line a 15x10x1-inch pan with foil, extending over the edges. Line bottom of pan with graham crackers; set aside.
In a medium bowl, combine melted chocolate and peppermint extract. Spread chocolate over crackers. Arrange ornaments on chocolate and press gently to secure. Sprinkle exposed chocolate with snowflake and pearl sprinkles. Let stand or chill until set before cutting to serve.
