Ingredients

  • 6 cup shredded red cabbage

  • 2 cup chopped apples

  • ¼ cup cider vinegar

  • ¼ cup water

  • 3 tablespoon packed dark brown sugar

  • 1 tablespoon canola oil

  • 1 ½ teaspoon dried thyme, crushed

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • Dash ground allspice (optional)

Directions

  1. In a 6-qt. electric or stove-top pressure cooker combine all of the ingredients.

  2. Lock lid in place. Set electric cooker on high pressure to cook 2 minutes. For stove-top cooker, bring up to pressure over medium-high heat; reduce heat enough to maintain steady (but not excessive) pressure. Cook 2 minutes. Remove from heat. For both models, quickly release pressure. Open lid carefully. Stir before serving.
