Pressure Cooker Italian Grinder Sandwiches

Yep, you can use your Instant Pot to make these loaded Italian sandwiches! A mix of Italian sausage and ground turkey makes these sandwiches definitely worth the 15 minutes they'll spend in your pressure cooker.

Ingredients

  • 1 ½ pound bulk sweet or hot Italian sausage

  • 8 ounce lean ground turkey

  • 2 cup sliced fresh cremini or button mushrooms

  • 2 15 ounce cans fire-roasted diced tomatoes, drained

  • 1 medium green or red sweet pepper, chopped

  • 1 medium onion, chopped

  • 1 6 ounce can no-salt-added tomato paste

  • 4 cloves garlic, minced

  • 2 tablespoon snipped fresh oregano or 2 tsp. dried oregano, crushed

  • 8 Italian hoagie rolls, split

  • 1 8 ounce pkg. shredded Italian blend cheeses

Directions

  1. For a 6-qt. electric pressure cooker, use the saute setting to cook and stir sausage, turkey, and mushrooms until meat is no longer pink. Drain off fat. For a stove-top cooker, cook directly in pot over medium heat. Stir tomatoes, sweet pepper, onion, garlic, tomato paste, and dried oreganox (if using) into meat mixture in cooker. Set electric cooker on high pressure to cook 15 minutes. For stove-top cooker, bring up to pressure over medium-high heat; reduce heat enough to maintain steady (but not excessive) pressure. Cook 15 minutes. Remove from heat. Let stand 15 minutes to release pressure naturally. Release any remaining pressure. Open lid carefully.

  2. Stir in fresh oregano (if using). Preheat broiler. Line an extra- large baking sheet with foil. Place roll tops, cut sides up, on prepared pan. Broil 5 to 6 inches from heat 1 to 2 minutes or until tops are lightly toasted. Remove roll tops from pan; set aside. Repeat with roll bottoms. Spoon meat mixture roll bottoms. Top with cheese. Broil 2 to 3 minutes more or until cheese is melted and just starting to brown; add roll tops.
