Pressure Cooker Gyro Nachos with Tzatziki

Gyro-flavored nachos are a crowd-pleaser and making nachos in the pressure cooker will be a YOU pleaser! Cooking two pounds of bone-in chicken thighs in 15 minutes is quite a feat, and allows you just enough time to whip up a homemade tzatziki recipe.

Ingredients

  • 2 pound bone-in chicken thighs, skinned

  • 1 red onion, thinly sliced

  • 2 tablespoon lemon juice

  • 2 tablespoon red wine vinegar

  • 2 tablespoon olive oil

  • 6 cloves garlic, minced

  • 4 teaspoon dried oregano, crushed

  • 1 teaspoon salt

  • 1 8 ounce pkg. plain pita chips*

  • 1 recipe Tzatziki Sauce

  • ½ cup chopped tomato

Tzatziki Sauce

  • 1 5.3 ounce carton plain Greek yogurt

  • 1 cup chopped cucumber

  • 2 teaspoon snipped fresh dill weed

  • 2 cloves garlic, minced

  • 1 teaspoon lemon juice

  • ¼ teaspoon salt

Directions

  1. Place the first eight ingredients (through salt) in a 4- to 6-qt. electric or stove-top pressure cooker. Lock lid in place. Set electric cooker on high pressure to cook 15 minutes. For stove-top cooker, bring up pressure over medium-high heat; reduce enough to maintain steady but not excessive pressure. Cook 15 minutes. Remove from heat. For both models, release pressure quickly. Open lid carefully.

  2. Remove chicken and onion from cooker using a slotted spoon. When chicken is cool enough to handle, remove bones. Shred chicken using two forks. In a bowl combine chicken and onion; add enough cooking liquid to moisten.

  3. Spread pita chips on a platter. Spoon chicken over chips. Top with Tzatziki Sauce and chopped tomato.

Tzatziki Sauce

  1. In a small bowl combine yogurt, cucumber, dill weed, garlic, lemon juice, and salt.

To make your own pita chips, lightly grease a large baking sheet. Split two 6-inch pita bread rounds in half horizontally; cut each half into six wedges (24 wedges total). Brush a wedges with olive oil and place on baking sheet. Bake in a 350°F oven 10 to 12 minutes or until golden brown.
