Melt margarine or butter in a 10-inch skillet. Add celery and onion and cook about 10 minutes or until tender. Add uncooked wild rice; cook and stir for 3 minutes. Add broth. Bring to boiling; reduce heat. Cover and simmer for 20 minutes. Stir in long grain rice. Return to boiling; reduce heat. Cover and simmer about 20 minutes more or until wild rice and long grain rice are tender and most of the liquid is absorbed.
Stir in turkey, apple, and carrot. Cook, uncovered, for 3 to 4 minutes more or until heated through and liquid is absorbed. To serve, stir in parsley. Makes 4 servings.
