Place bread cubes in a single layer in a 15x10x1-inch baking pan. Bake in a 375 degree F oven about 10 minutes or until golden, stirring once or twice; set aside. Reduce oven temperature to 325 degrees F.
In a medium skillet cook the sweet pepper, onion, and garlic in hot oil over medium heat about 4 minutes or until vegetables are tender; remove from heat. Stir in the lemon juice, rosemary, and cayenne pepper. In a large bowl toss together the bread cubes, onion mixture, and parsley. Drizzle with enough broth to moisten, tossing lightly to combine. Transfer mixture to a 1 1/2-quart casserole. Bake, covered, for 20 minutes. Uncover; bake about 20 minutes more or until heated through.
