  • For dressing, in small bowl, stir together lime peel, lime juice, fish sauce, oil, chili pepper, vinegar, garlic and black pepper.

  • In large bowl, toss chicken with 1/4 cup of the dressing; let stand 5 minutes.

  • In another large bowl, toss coleslaw mix, green onions, mint and remaining dressing. Add chicken and toss to coat. Serve with sesame crackers. Makes 4 servings.
