In large bowl, toss chicken with 1/4 cup of the dressing; let stand 5 minutes.
In another large bowl, toss coleslaw mix, green onions, mint and remaining dressing. Add chicken and toss to coat. Serve with sesame crackers. Makes 4 servings.
