Directions

  1. Preheat oven to 350 degrees F. In a medium saucepan heat oil over medium heat. Add onion and garlic; cook about 4 minutes or until tender, stirring occasionally. Stir in ale. In a medium bowl stir together apple juice, cornstarch, 3 tablespoons mustard, caraway seeds, rosemary, and pepper; stir into ale mixture. Cook and stir until thickened and bubbly. Cool for 10 minutes.
  2. Meanwhile, in a covered large saucepan cook potatoes and carrots in a large amount of boiling, lightly salted water about 10 minutes or until slightly tender but still firm; drain.
  3. In an ungreased 3-quart rectangular baking dish layer kielbasa, pork chops, potato-carrot mixture, apples, and sauerkraut. Spoon ale mixture evenly over sauerkraut.
  4. Cover tightly with foil. Bake for 45 to 60 minutes or until potatoes are tender and center is heated through. If desired, serve with additional mustard.

Make-Ahead Directions:

Prepare as directed through Step 3. Cover with plastic wrap and chill for 2 to 24 hours. To serve, let stand at room temperature for 10 minutes. Meanwhile, preheat oven to 350 degrees F. Remove plastic wrap; cover tightly with foil. Bake for 65 to 70 minutes or until potatoes are tender and center is heated through. If desired, serve with additional mustard.
