Preheat oven to 375 degree F. Coat eight 2-1/2-inch muffin cups with cooking spray. Unroll cornbread dough, do not twist (16 pieces); cut each piece in half crosswise. Press 3 halves into each cup, cutting and pressing to line cup.
Divide sausage among dough-lined cups. Top with cheese. Spoon sauce into cups. Cut remaining 8 dough halves lengthwise into halves. Arrange strips atop each muffin in pattern.
Bake 12 minutes until golden. Cool on rack 2 minutes. Makes 8 servings.
