In a small mixing bowl combine egg, milk, 1 tablespoon cheese, salt, and pepper until just combined.
Cook rigatoni according to package directions; drain. In a skillet cook sausage until brown. Break into small pieces.
Add cooked rigatoni to skillet and toss with sausage until warm. Remove skillet from heat. Pour egg mixture into the skillet, and toss until pasta is well coated and heated to 160 degree F. Sprinkle with parsley and additional cheese. Serve immediately. Makes 1 serving.
