Directions

  1. Stir together semi-soft cheese, goat cheese, and pine nuts. Spread about 2 tablespoons cheese mixture over each prosciutto slice. Top each with arugula leaves.
  2. Roll up each slice from a short side. Cut into 1/2-inch-thick slices. Serve immediately or cover and chill up to 6 hours. Makes about 48 appetizers.
