Preheat oven to 400 degree F. In a medium bowl stir together dry stuffing mix, undrained chile peppers, orange juice or water, and melted butter. Spoon stuffing mixture evenly into the bottom of a 3-quart rectangular baking dish. Arrange chops over stuffing mixture in baking dish. Season chops with salt and pepper.
Bake, uncovered, in preheated oven about 30 minutes or until an instant-read thermometer inserted in center of chops registers 140 degree F (make sure thermometer does not touch bone). Carefully spoon cheese sauce over chops and stuffing mixture. Bake about 10 minutes more or until thermometer registers 160 degree F. Makes 4 servings.
