Pork-Zucchini Tacos

Zucchini has a knack for taking on all forms and flavors. Here we turn it into a delicious, veggie-filled pork taco that takes 25 minutes total to make.

Ingredients

  • 1 pound ground pork

  • ½ cup chopped onion

  • 1 ¼ cup thinly sliced zucchini

  • 1 cup salsa

  • 2 teaspoon ground pasilla or ancho chile pepper

  • 1 teaspoon dried Mexican or regular oregano, crushed

  • ½ teaspoon ground cumin

  • ¼ teaspoon ground cinnamon

  • 12 6 inch corn tortillas, warmed

  • Shredded queso Oaxaca or crumbled queso fresco

  • Snipped fresh Italian parsley

Directions

  1. In a large skillet cook ground meat and onion over medium heat until meat is browned. Drain off fat. Stir in next six ingredients (through cinnamon). Bring to boiling; reduce heat. Simmer, uncovered, until zucchini is tender and mixture reaches saucelike consistency, stirring occasionally.

  2. Serve meat mixture in corn tortillas. Top with cheese, parsley, and additional onion.
