Drain off fat. Stir in next six ingredients (through cinnamon). Bring to boiling; reduce heat. Simmer, uncovered, until zucchini is tender and mixture reaches saucelike consistency, stirring occasionally. Serve meat mixture in corn tortillas. Top with cheese, parsley, and additional onion.
