Pork Verde Tacos with Quick Jalapeno Sauce

This spicy jalapeno topping would work just as well on steak, chicken or shrimp.

Ingredients

  • 2 ½ cup shredded cooked pork

  • 1 cup green salsa (salsa verde)

  • 10 6 inch corn tortillas, warmed

  • 1 recipe Quick Jalapeño Sauce

  • Shredded red cabbage, sliced fresh jalapeño chile pepper, and/or crumbled queso fresco (optional) (see tip, page xx)

  • Lime halves or wedges (optional)

Quick Jalapeño Sauce

  • ¼ cup mayonnaise

  • 2 tablespoon snipped fresh cilantro

  • ½ of a small jalapeño chile pepper, seeded and finely chopped*

  • 1 teaspoon cider vinegar

  • 1 teaspoon water

  • 1 small clove garlic, minced

Directions

  1. In a large saucepan combine shredded pork and green salsa. Cook, covered, over medium heat about 10 minutes or until heated through, stirring occasionally.

  2. Spoon meat mixture onto tortillas. Top with Quick Jalapeño Sauce and, if desired, cabbage, chile pepper slices, and/or queso fresco. Fold tortillas over filling. If desired, serve with lime.

Quick Jalapeño Sauce

  1. In a small bowl stir together mayonnaise, cilantro, jalapeno pepper, vinegar, the water, and garlic.

*Tip:

Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
