Directions

  1. Preheat oven to 350 degrees F. Wrap tortillas in foil; heat in oven about 10 minutes or until heated through.
  2. Meanwhile, in a large bowl stir together shredded meat, the 1 cup salsa, the bean dip, and fajita seasoning.
  3. Grease a 3-quart rectangular baking dish; set aside. To assemble burritos, place 1/3 cup of the meat mixture onto each tortilla near one edge. Top meat mixture on each tortilla with a stick of cheese. Fold in the sides of tortilla and roll up, starting from edge with the filling. Place filled tortillas, seam sides down, in prepared dish.
  4. Bake, uncovered, about 30 minutes or until heated through. If desired, serve with lettuce, sour cream, and additional salsa.

I made this for 2 of us and it made 3 burritos with 8" tortillas. i could have stretched it to 4 because they were a little overfilled but no way is 1/3 cup an adequate filling. I used reduced fat cheddar for the cheese. Good flavor. Also, the bean dip came in 9-ounce cans. I did not find the smaller...just weighed out the 3 1/8 ounce amount.
