Ingredients

  • 4 cup finely chopped green tomatoes (about 5 medium)

  • ½ cup finely chopped green sweet pepper

  • ½ cup finely chopped roasted red sweet pepper

  • ½ cup finely chopped red onion

  • 2 tablespoon kosher salt

  • ½ cup white balsamic vinegar

  • ¼ cup honey

  • ¼ teaspoon celery seeds

  • 2 cup mayonnaise with olive oil

  • 1 - 2 tablespoon country Dijon-style mustard

Directions

  1. In a large nonmetal bowl combine the first five ingredients (through salt). Mix well. Cover bowl with a kitchen towel; let stand at room temperature 2 hours.

  2. Transfer tomato mixture to a large colander. Drain and rinse well. Drain again. Transfer tomato mixture to a 4- to 6-qt. stainless steel, enamel, or nonstick heavy pot. Add vinegar, honey, and celery seeds. Bring to boiling; reduce heat. Simmer, uncovered, 25 minutes, stirring occasionally. Cool to room temperature. Whisk in mayonnaise and mustard.

  3. Spoon spread into clean 4-oz. storage containers. Seal. label, and freeze up to 3 months.* To serve, thaw one portion in the refrigerator.

*Tip

If you prefer, transfer spread to an airtight storage container. Cover and chill up to 2 weeks.
