Mix well. Cover bowl with a kitchen towel; let stand at room temperature 2 hours. Transfer tomato mixture to a large colander. Drain and rinse well. Drain again. Transfer tomato mixture to a 4- to 6-qt. stainless steel, enamel, or nonstick heavy pot. Add vinegar, honey, and celery seeds. Bring to boiling; reduce heat. Simmer, uncovered, 25 minutes, stirring occasionally. Cool to room temperature. Whisk in mayonnaise and mustard. Spoon spread into clean 4-oz. storage containers.
