Pomegranate Green Salad


Pomegranate seeds, cheese, and honey-roasted peanuts amp up a simple salad.

  • Seeds from 1 pomegranate

  • 2 tablespoon red wine vinegar

  • 1 tablespoon Dijon-style mustard

  • 1 teaspoon sugar

  • ¼ cup olive oil

  • 1 head Romaine or 2 heads Bibb lettuce, torn into bite-size pieces

  • 2 ounce Manchego cheese or Parmesan cheese, shaved

  • ½ cup honey-roasted peanuts, roughly chopped


  1. In a bowl combine half of the pomegranate seeds, red wine vinegar, Dijon mustard, and sugar. Stir together and mash the seeds to release their juice. Whisk in olive oil until combined; set aside. Place lettuce in a large serving bowl. Top with remaining pomegranate seeds, cheese, and the peanuts. Toss the salad with half of the dressing. Pass remaining dressing.
