Stir together and mash the seeds to release their juice. Whisk in olive oil until combined; set aside. Place lettuce in a large serving bowl. Top with remaining pomegranate seeds, cheese, and the peanuts. Toss the salad with half of the dressing. Pass remaining dressing.
