Pomegranate-Citrus Mock Sangria
In a 1-quart saucepan combine raspberry jam and 1 cup water. Bring to a simmer over medium-high, stirring to dissolve jam completely. Remove from heat. Fully submerge chai and English breakfast tea bags. Let steep 40 minutes; discard bags. Chill, covered, up to 24 hours.Advertisement
In a 2-quart pitcher combine four orange slices and tea mixture. Using a wooden spoon, gently press orange slices about 10 times to release juices and bruise peel. (Don't pulverize.) Stir in pomegranate, grapefruit, orange, and lemon juices and cayenne. Gently stir in lemon slices and remaining orange slices. Chill, covered, up to 2 hours.
To serve: Stir mixture well. Add club soda. Stir. Pour into ice-filled glasses. Garnish with pomegranate seeds and orange slices. Serves 8.
