4 half-pint jars

Ingredients

  • 2 cup pitted fresh dark sweet cherries

  • 1 cup fresh raspberries

  • 1 cup fresh blueberries

  • 3 cup sugar

  • 1 cup pomegranate juice

Directions

  1. In a 4-qt. heavy pot combine all the ingredients. Bring to boiling, stirring until sugar dissolves; reduce heat. Simmer, uncovered, about 20 minutes or until compote is thickened and reduced to 4 cups, stirring frequently.

  2. Ladle hot compote into hot, sterilized half-pint canning jars, leaving a 1/4-inch headspace (p. xx). Wipe jar rims; adjust lids and screw bands.

  3. Process filled jars in a boiling-water canner 15 minutes (start timing when water returns to boiling). Remove jars from canner; cool on wire racks.

Simply Serve

For an ultimately delicious treat, spoon this berryful compote over a plain cheesecake or a moist chocolate cake.
