Polenta Burgers

Polenta Burgers

Directions

  1. Preheat oven to 425 degrees F. Lightly oil a large baking sheet; set aside. Drain polenta well and place in a large bowl. Using your hands, crumble polenta into small pieces; pat dry with paper towels. Add diced tomato, cheese, and eggs to crumbled polenta; mix well.
  2. On the prepared baking sheet, shape polenta mixture into four patties, each the size of a bread slice. Bake for 10 to 15 minutes or until patties are slightly crisp and edges are lightly browned.
  3. Place a patty atop each of 4 of the bread slices. If desired, top with green onions and tomato slices. Spread mayonnaise on the remaining 4 bread slices; place, mayonnaise sides down, on the sandwiches.
