Pizza Souffles

Directions

  1. Preheat oven to 400 degrees F. Lightly grease a large baking sheet. Press half of the pizza dough onto baking sheet into a 9x4-inch rectangle.* Bake for 8 to 10 minutes or until golden brown. Transfer to a wire rack; cool completely. Tear baked pizza crust into bite-size pieces. Place pieces in a food processor or blender. Cover and process or blend until coarse crumbs form (you should have about 2 1/4 cups crumbs). Grease six 7- to 8-ounce ramekins or custard cups. Place on another baking sheet; set aside.
  2. Separate eggs; set egg whites aside. In a large bowl stir together egg yolks, spinach, tomatoes, Parmesan cheese, and crumbs until well mixed.
  3. In a medium bowl beat egg whites with an electric mixer on high speed until stiff peaks form (tips stand straight). Gently fold beaten egg whites into the spinach mixture. Divide the spinach mixture among the prepared ramekins. Bake about 25 minutes or until a knife inserted near the centers comes out clean. Serve with marinara sauce.

*Tip:

To make Parmesan breadsticks, press the remaining pizza dough into a 9x4-inch rectangle. Cut into four 9x1-inch strips. Place on baking sheet. Brush with 1 tablespoon melted butter; sprinkle with 1 tablespoon grated Parmesan cheese. Bake in the 400 degrees oven for 8 to 10 minutes or until golden brown.
