Blended with Greek yogurt, watermelon and strawberries, no one will guess that these pretty pink smoothies are hiding more than a cup of cauliflower! Blend up this healthy breakfast smoothie recipe to start your day on a nutritious note.

Ingredients

  • 1 ½ cup small fresh cauliflower florets

  • 2 cup watermelon cubes (seeds and rinds removed)

  • 1 ½ cup frozen unsweetened whole strawberries

  • 1 6 ounce carton strawberry Greek yogurt

  • 2 tablespoon strawberry preserves (optional)

Directions

  1. In a small saucepan cook cauliflower in enough boiling water to cover, about 10 minutes or until very tender. Drain and rinse with cold water to cool quickly.

  2. In a blender combine cooked cauliflower, watermelon, strawberries, yogurt, and, if desired, strawberry preserves. Cover and blend until very smooth, stopping and scraping sides of blender as needed.

  3. Pour into tall glasses and serve immediately.

Make-Ahead Tip:

Prepare smoothies as directed. Transfer to an airtight freezer container. Cover and chill for up to 3 days or freeze for up to 6 months. If frozen, thaw in the refrigerator before serving. Stir well before serving.
