Directions
- Prepare and roll out pastry. Line a 9-inch pie plate with pastry. Trim and crimp edge as desired. Set aside.
- For filling, slightly beat eggs with a rotary beater or fork. Stir in sugar, lemon juice, butter or margarine, cinnamon, nutmeg, and salt. Add raisins and walnuts; mix until just combined. Pour filling into the pastry-lined pie plate. Bake in a 375 degree F oven for 30 minutes or until center is set. Cool on a wire rack. Cover and refrigerate within 2 hours. Makes 8 servings.
Pastry for Single-Crust Pie

- In a bowl stir together flour and salt. Using a pastry blender, cut in shortening until pieces are pea-size. Sprinkle 1 tablespoon of water at a time over the flour mixture, tossing with a fork until all of the dough is moistened. Form dough into a ball.
