Pickled Onions

Pickling onions infuses pleasantly tart flavor with the help of vinegar and bold spices. Quickly broiling the onions first helps give them a deeper, caramelized flavor.

  • 1 large red onion, cut into 1/2-inch slices

  • ¼ cup grapefruit juice

  • 2 tablespoon orange juice

  • 2 tablespoon lime juice

  • 1 clove garlic, minced

  • 1 teaspoon coarse sea salt or kosher salt

  • 1 teaspoon dried Mexican or regular oregano, crushed

  • ¼ teaspoon freshly cracked black pepper


  1. Preheat broiler. Line a 15x10-inch baking pan with foil. Arrange onion slices in prepared pan. Broil 4 to 5 inches from heat 14 minutes or until charred, turning once. Cool slightly. Separate onion into rings, discarding any large, dry blackened pieces. If desired, coarsely chop onion.

  2. In a medium bowl combine onion and remaining ingredients. Cover and chill 2 to 24 hours before serving.
