  • Wash vegetables thoroughly; place in two 1-qt. glass canning jars. Add 1/8 tsp. salt, 1/8 tsp. black pepper, and a dill sprig to each jar. In medium saucepan bring vinegar to a boil; immediately pour over vegetables in jars. Cover; chill 2 hours to 5 days.

Tips

If you can’t find fruit-flavored balsamic vinegar, combine 3 cups white balsamic vinegar with 1 cup fruit juice or nectar.
