Directions

  1. Coat the inside of a 5- to 6-quart slow cooker with cooking spray. Layer meat, sweet peppers, onions, drained tomatoes, and garlic in cooker.
  2. In a small bowl combine broth, soy sauce, vinegar, cornstarch, and sugar. Pour over meat mixture in cooker. Add bamboo shoots.
  3. Cover and cook on low-heat setting for 7 hours or on high-heat setting for 4 hours.
  4. Serve meat mixture with hot cooked rice.
