Pear, Apple, and Cranberry Cobbler

Ingredients

  • 4 ripe pears, peeled, cored, and chopped

  • 3 cooking apples, peeled, cored, and chopped

  • 2 cup fresh cranberries

  • 1 cup sugar

  • 3 tablespoon all-purpose flour

  • 2 teaspoon orange zest

  • 1 teaspoon lemon juice

  • teaspoon salt

  • ¾ cup all-purpose flour

  • ¼ cup cornmeal

  • 2 tablespoon sugar

  • 1 ½ teaspoon baking powder

  • ¼ cup butter, cut up

  • cup milk or half-and-half

  • 1 egg, lightly beaten

  • Vanilla ice cream or whipped cream (optional)

Directions

  1. Preheat oven to 375°F. In a large bowl combine the first eight ingredeints (through salt). Toss lightly until just combined. Spoon into a 2-qt. casserole. Bake, uncovered, 25 minutes.

  2. Meanwhile, in a medium bowl combine the next four ingredients (through baking powder). Using a pastry blender, cut in butter until pea-size. Combine milk and egg. Add to flour mixture all at once, stirring just until combined. Spoon in 8 or 10 mounds over hot fruit.

  3. Bake 25 minutes more or until a toothpick inserted in topping comes out clean. Cool 30 minutes. Serve warm and, if desired, with ice cream or whipped cream.
