Pear and Sweet Potato Soup

Directions

  1. In a large pot melt butter over medium-low heat. Add onion and garlic; cook and stir for 5 minutes or until tender. Add pears, potatoes, salt, and thyme. Cook and stir for 3 minutes more. Stir in broth. Bring to boiling; reduce heat. Simmer, covered, for 30 to 35 minutes or until tender. Using an immersion blender, blend until smooth. Season to taste. Top with sauteed pear slices, a drizzle of sour cream, fresh thyme sprigs, and cracked black pepper, if desired.

*Sauteed Pear Slices:

Slice a pear vertically with the stem and core intact; remove seeds. In a large skillet, cook slices in 1 tablespoon hot butter over medium-high heat for 4 minutes or until golden brown, turning once. Drain slices on paper towels.
