Peanut-Pretzel Bars

Inspired by childhood snacks, these peanut-pretzel bars can be prepped in a half hour. Peanut butter, quick oats, and sweetened condensed milk combine to make a sweet, salty, chewy treat.

Peanut-Pretzel Bars

Directions

  1. Preheat oven to 350 degrees F. In a large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar and baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and 1 teaspoon of the vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour and the oats.
  2. For filling, in a medium saucepan cook and stir peanut butter pieces and sweetened condensed milk over low heat until mixture is melted and smooth. Remove from heat. Stir in peanuts, pretzels, and the remaining 1 teaspoon vanilla.
  3. Press two-thirds of the oat mixture onto the bottom of an ungreased 15x10x1-inch baking pan. Spread filling over oat mixture. Dot the remaining oat mixture onto filling.
  4. Bake for 20 to 25 minutes or until top is golden. Cool in pan on a wire rack. Cut into bars.

Place bars in a single layer in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months.
