This easy baked salmon recipe is sure to delight all of your dinner guests. Our Peanut-Crusted Salmon is baked to flaky perfection and coated in a delicious combination of citrus flavors, peanuts, parsley and garlic.

Ingredients

  • 6 5-6 ounce fresh or frozen skinless salmon fillets, about 1 inch thick

  • 2 teaspoon finely shredded orange peel (set aside)

  • 2 - 3 tablespoon orange juice

  • ¼ teaspoon salt

  • teaspoon coarse ground black pepper

  • 1 cup whole wheat panko bread crumbs

  • cup peanuts, toasted* and finely chopped

  • 2 tablespoon finely snipped fresh parsley

  • 2 tablespoon olive oil

  • 2 cloves garlic, minced

  • ½ cup dry white wine or chicken broth

Directions

  1. Preheat oven to 450°F. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Drizzle fish with orange juice; sprinkle with salt and pepper.

  2. In a shallow dish combine panko, peanuts, parsley, oil, garlic, and orange peel. Dip fish into peanut mixture, turning and pressing to coat.

  3. Place fish in a single layer in a 3-quart rectangular baking dish. Add wine to dish. Bake for 8 to 12 minutes or until fish begins to flake when tested with a fork.

*Tip

To toast nuts, preheat oven to 350°F. Spread nuts in a shallow baking pan. Bake for 5 to 10 minutes or until lightly browned, shaking pan once or twice. Watch carefully so the nuts don't burn.
