Peanut Butter Chip Oatmeal Cake

Directions

  1. Preheat oven to 350 degrees F. In a large bowl combine boiling water and oats; let stand 10 minutes. Meanwhile, grease a 13x9-inch baking pan.
  2. Add both sugars and butter to oats mixture, stirring until butter is melted. Stir in eggs until combined. Stir in flour, baking soda, cinnamon, and salt. Stir in 1 cup of the peanut butter pieces.
  3. Spread batter in prepared pan. Sprinkle with pecans and remaining peanut butter pieces. Bake 35 minutes or until a toothpick comes out clean. Cool in pan on a wire rack.
