In a 10-inch cast-iron skillet* with deep sides combine the first six ingredients (through salt). Cook over medium heat until the peaches release juices, stirring constantly. Continue cooking until hot and bubbly, about 5 minutes more. In a small bowl combine muffin mix, egg, and milk (batter will be slightly lumpy). Drop spoonfuls of batter over the hot peach mixture. Bake 30 minutes or until a toothpick inserted into topping comes out clean. Drizzle with honey; serve warm. *Tip Be sure the cast-iron skillet it is well seasoned. If you don't have an oven-safe skillet, cook the fruit mixture in a medium saucepan and then transfer to a 2-qt. baking dish. Continue as directed.
