Peach and Feta Bulgur Salad

Directions

  1. In a medium saucepan combine the bulgur and water. Bring to boiling; reduce heat. Simmer, covered, for 12 to 15 minutes or until bulgur is tender; drain off any excess water and cool bulgur. Combine cooled bulgur with remaining ingredients and toss to coat. Season to taste with salt and pepper.

this was delicious and very light. i used apples instead of peaches and it worked just fine, especially since i don't like peaches and they're out of season now. i really enjoy bulgur recipes, they're so healthy and tasty.
