Paul's Pumpkin Bars
- In a medium bowl stir together flour, baking powder, cinnamon, baking soda, and salt; set aside. In a large mixing bowl beat together eggs, pumpkin, sugar, and oil. Add the flour mixture; beat till well combined. Stir in chopped pecans, if desired.
- Spread batter in an ungreased 15x10x1-inch baking pan. Bake in a 350 degrees oven for 25 to 30 minutes or till toothpick inserted in center comes out clean. Cool on wire rack. Frost with Cream Cheese Frosting. Top with additional pecan halves, if desired. Cut into squares. Store in refrigerator.
Cream Cheese Frosting:
- In a medium bowl beat together cream cheese, butter and vanilla till fluffy. Gradually add powdered sugar, beating till smooth.

I have been making these since it first appeared in BH&G in November, 1976 and still have the clipping. It was reprinted in March, 1976. His name is Paul Rainbow. They are delicious!!!

I have been making these pumpkin bars for years. They are my "Fall favorite". So easy to make. I prefer more frosting, so I double the cream cheese frosting! Yum!!!!

I got this recipe out of your magazine, probably 40 years ago. I made it every year of many Christmases. I lost the recipe and am so glad you have it on your site. Thank you. I love these bars.
