Directions

  1. Prepare pasta according to package directions; drain.
  2. In a large skillet, cook carrot and green onion in olive oil until crisp-tender. Stir in 1 cup chopped tomato and heat through. Place drained pasta in bowl. Add dried tomatoes, fresh oregano, pine nuts, salt, and warmed tomato mixture. Toss to mix. Makes 2 servings.
