Tortellini and Fresh Spinach Soup
- In a large saucepan stir together the carrot, onion, bouillon granules, Italian seasoning, water, and pepper. Bring to boiling; reduce heat. Stir in tortellini. Cover and simmer for 15 minutes.
- Stir in spinach and cook about 15 seconds or just until spinach is wilted. To serve, ladle soup into individual bowls. Sprinkle with Parmesan cheese. Makes 2 side-dish servings.
