Directions

  1. In large saucepan heat the oil over medium-high heat. Add the onion, sweet pepper, zucchini, and garlic. Cook and stir for 4 to 5 minutes or until tender. Stir in the undrained tomatoes, tomato paste, oregano, salt, and basil. Bring to boiling; reduce heat. Cover and simmer for 20 minutes.
  2. Meanwhile, cook pasta according to package directions. Drain and return to saucepan. Add half of the sauce to the pasta; toss to coat. Divide among six dinner plates. Top with remaining sauce, the ricotta cheese, and parsley. Makes 6 servings.
