This fresh pasta sauce recipe is the essence of simplicity. Chopped Roma tomatoes, lightly sauteed in olive oil and seasoned with basil, are tossed with hot cooked rotini and topped with grated cheese.
Cook the pasta according to package directions; drain.
Meanwhile, in a saucepan combine tomatoes, olive oil, and salt. Cook over medium-low heat until heated through and tomatoes start to juice-out slightly. Stir in the basil.
Divide pasta among 4 plates. Top each serving with some of the tomato mixture. Sprinkle with Parmesan cheese and pepper. Makes 4 servings.
