Directions

  1. In a 6-quart Dutch oven, cook bacon over medium heat just until crisp. Add onion and celery. Cook about 5 minutes or until tender. Add carrot and garlic; cook for 2 minutes more. Stir in chicken broth, tomatoes, beans, chickpeas, parsley, basil, and oregano. Bring to boiling; reduce heat. Cover and simmer for 20 minutes, stirring occasionally. Stir in macaroni. Cook, uncovered, for 8 to 10 minutes more or until macaroni is just tender, stirring frequently. Sprinkle Parmesan cheese over. Makes 8 to 10 servings.

Make Ahead:

Cool soup; place in a 1-, 2-, or 4-serving size airtight freezer containers. Seal, label, and freeze up to 3 months. To serve, thaw overnight in the refrigerator. Transfer to saucepan; heat to boiling over medium heat.

To lower the sodium 222 mg per serving, use reduced-sodium chicken broth instead of regular chicken broth.
