Cook tortellini according to package directions. Drain; rinse with cold water. Drain well. In large bowl, combine tortellini, cheese, salami, sweet pepper, olives, green onions, and parsley.
In a food processor bowl or blender container, combine oil, vinegar, basil, mustard, garlic, salt, and black pepper. Cover and process or blend until nearly smooth. Pour over tortellini mixture. Toss gently to coat evenly. Cover and refrigerate for at least 2 hours or up to 24 hours. Makes 12 side-dish servings.
