Crimson Pasta Toss
- Cook pasta in salted water according to package directions. Drain well; return pasta to pan and keep warm.
- Meanwhile, combine tofu, dried tomatoes, broth, oregano, basil, chipotle chilies, garlic, and salt in a blender container or food processor bowl. Cover and blend or process until nearly smooth. Toss with cooked pasta in the pot and heat through. Garnish with finely shredded basil leaves, shaved Parmesan cheese, and quartered cherry tomatoes, if desired. Serve immediately. Makes 6 servings.

If desired, substitute 3 tablespoons purchased dried tomato pesto for the dried tomatoes, oregano, and basil.
