Paleo Spicy Poached Eggs in Tomato Sauce

Directions

  1. For tomato sauce, in a large skillet heat 1 Tbsp. of the oil over medium heat. Add garlic; cook and stir 1 minute. Stir in next four ingredients (through black pepper). Bring to boiling; reduce heat. Boil gently, uncovered, 12 to 15 minutes or until tomato juices begin to thicken, stirring and crushing tomatoes occasionally with a spoon.
  2. Break eggs, one at a time, into a small bowl or cup and slip into tomato mixture. Simmer, covered, 5 minutes or until egg whites are completely set and yolks start to thicken.
  3. Before serving, drizzle eggs with remaining 1 Tbsp. oil and sprinkle with basil.

This is a flavorful delicious dish, for any meal!
Thank you for showing a recipe with fresh tomatoes!!
If you have left over pasta or polenta, fry it in EVOO with mushrooms, place in shallow bowl, top with sauce and egg!
Breakfast W/garlic toast, Lunch W/lite salad,
