Bibb lettuce leaves are large enough to stand up to the filling for the Paleo wrap recipe. Pack tuna, shredded carrot, slivered almonds, and pineapple wedges onto your leaf, then add a drizzle of tasty sesame ginger vinaigrette.
Place lettuce leaves in an airtight container. In another airtight container stir together next 4 ingredients (through cilantro) until combined. Place carrot, almonds, and pineapple in separate airtight containers. Place all containers in an insulated lunch pack with a frozen ice pack. Assemble wraps as directed and serve with pineapple. Serve within 5 hours.
Choose containers that are just large enough to hold the food so that they all fit in the insulated lunch pack.
