Add spinach, cover, and cook about 3 minutes or until spinach is wilted. Top with Chimichurri Sauce and a poached egg. Chimichurri Sauce In a food processor or blender combine parsley, shallot, oregano,vinegar, lime juice, olive oil, garlic, and crushed red pepper.
