Paleo Green Eggs with Ham

If you need a veggie-filled lunch or dinner, try this Paleo recipe topped with a poached egg. The runny yolk makes the cooked spinach and ham even tastier!

  • ¼ cup chopped ham

  • 2 teaspoon olive oil

  • 4 cup spinach

  • 1 tablespoon Chimichurri Sauce*

  • 1 poached egg

Chimichurri Sauce

  • 1 cup packed fresh Italian parsley

  • 1 medium shallot, finely chopped

  • 2 tablespoon snipped fresh oregano

  • 2 tablespoon red wine vinegar

  • 2 tablespoon lime juice

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • ¼ teaspoon salt

  • ¼ teaspoon crushed red pepper


  1. In a large skillet cook chopped ham in olive oil over medium-high until browned. Add spinach, cover, and cook about 3 minutes or until spinach is wilted. Top with Chimichurri Sauce and a poached egg.

Chimichurri Sauce

  1. In a food processor or blender combine parsley, shallot, oregano,vinegar, lime juice, olive oil, garlic, and crushed red pepper. Cover and blend or process until finely chopped, scraping sides as necessary.
