Oven-Roasted Plum Tomatoes

Tomato lovers, this side dish is for you! Top plum tomatoes with a combo of Parmesan cheese and bread crumbs to give the tomatoes deliciously crispy tops.

  • 6 plum tomatoes, cut in half crosswise

  • ¼ cup Parmesan cheese

  • ¼ cup panko

  • 1 - 2 tablespoon melted butter or olive oil

  • Fresh oregano

  • Salt

  • Black pepper


  1. Place tomatoes on a baking sheet. Stir together Parmesan cheese, panko, and enough melted butter or olive oil to hold it together (1 to 2 Tbsp.). Add fresh oregano, salt, and black pepper. Sprinkle over tomato halves.

  2. Bake in a 450 degree F oven until tomatoes are tender, about 8 to 10 minutes. If desired, top with additional fresh oregano.
