You don't need any fancy tools or equipment to create a steakhouse-worthy dinner at home. This roast beef tenderloin recipe cooks to juicy perfection in the oven. Use a thermometer to ensure the beef tenderloin is cooked exactly how you like it. Once it's out of the oven, let it rest for at least 15 minutes before slicing. This will ensure the finished roast is tender and juicy.

Serve the finished roast beef tenderloin with one of our three homemade sauces. You can make them up to 24 hours before serving. This steak dinner is easy and impressive.

Ingredients

  • 1 tablespoon olive oil

  • 1 3-pound beef tenderloin roast, trimmed

  • 1 ½ teaspoon kosher salt

  • 1 teaspoon ground black pepper

  • 1 recipe Peppercorn-Horseradish Sauce, Mediterranean Dipping Sauce, or Soy-Ginger Dipping Sauce

  • Fresh parsley sprigs (optional)

Mediterranean Dipping Sauce

  • ¼ cup champagne vinegar

  • ¼ cup finely snipped fresh tarragon

  • 2 tablespoon finely chopped shallot (1 medium)

  • 2 tablespoon chopped capers

  • 2 teaspoon Dijon-style mustard

  • ½ teaspoon salt

  • ¼ cup olive oil

Peppercorn-Horseradish Sauce

  • 1 8 ounce carton sour cream

  • 3 tablespoon prepared horseradish

  • 1 tablespoon snipped fresh chives

  • 2 teaspoon white wine vineagar

  • 1 teaspoon coarsely ground black peppercorns

Soy-Ginger Dipping Sauce

  • ½ cup reduced-sodium soy sauce

  • ¼ cup lime juice

  • 2 tablespoon thinly sliced green onion (1)

  • 2 teaspoon grated fresh ginger

  • 2 teaspoon Asian sweet chili sauce

  • 2 cloves garlic, minced

  • 2 tablespoon toasted sesame oil

  • 1 tablespoon canola oil

Directions

    Preheat oven to 425°F. Brush the olive oil over the meat.

    For the rub, in a small bowl stir together salt and pepper. Sprinkle the mixture evenly over meat; rub it in with your fingers.

    Place the roast on a rack set in a shallow roasting pan. Insert an oven-going meat thermometer into the center of the roast.

    Roast, uncovered, for 35 to 40 minutes or until the meat thermometer registers 135°F for medium rare. (For medium, roast for 45 to 50 minutes or until meat thermometer registers 150°F.)

    Transfer the meat to a cutting board. Cover roast with foil and let stand for 15 minutes.

    Slice the meat across the grain and arrange on a serving platter.

Mediterranean Dipping Sauce

    In a small bowl whisk together vinegar, tarragon, shallot, capers, mustard, and salt.

Soy-Ginger Dipping Sauce

    In a small bowl whisk together soy sauce, lime juice, green onion, ginger, chili sauce, and garlic.
