The best part about these fluffy pancakes? They're a blank canvas for toppings like apples, blueberries, figs, and plums. Lemon curd, vanilla custard, and marscarpone cheese also make scrumptious toppers.
Preheat oven to 450 degrees F. In a 10-inch cast-iron or oven-going skillet melt 1/4 cup butter over medium-high heat. Add plums; cook about 5 minutes or until softened and golden, stirring occasionally. Keep warm.
In a medium bowl whisk together eggs, flour, milk, vanilla, and salt until combined. Pour over plums. Place skillet in the preheated oven and bake for 10 to 12 minutes or until puffed and brown. Remove from oven.
In a small bowl combine brown sugar and cinnamon. Pour 1/4 cup melted butter over pancake; sprinkle with brown sugar mixture. Bake about 5 minutes more or until brown sugar is melted and dark brown. Remove from oven. Drizzle with lemon juice.
Serve pancake from skillet or slide out onto a serving plate. Cut into wedges and serve immediately.
