Orange-and-Chipotle-Glazed Ribs

Directions

  1. In a large pot combine ribs and bay leaves. Add enough cold water to cover. Bring to boiling; reduce heat. Simmer, covered, for 1-1/2 to 2 hours or until tender. Drain ribs, discarding bay leaves and liquid. Arrange ribs in a large glass baking dish.
  2. Meanwhile, for sauce, in a large skillet cook onion, poblano pepper, and garlic in hot oil over medium-high heat for 5 to 6 minutes or until tender, stirring frequently. Add orange juice, chipotle peppers, brown sugar, salt, and cinnamon. Bring to boiling; reduce heat. Simmer, uncovered, about 20 minutes or until slightly thickened and reduced to 3 cups, stirring frequently.
  3. Reserve 1/2 cup of the sauce. Pour the remaining sauce over ribs in baking dish, turning to thoroughly coat ribs with sauce. Cover and chill for 4 hours.
  4. Remove ribs from sauce, discarding sauce. For a charcoal grill, grill ribs on the rack of an uncovered grill directly over medium coals about 20 minutes or until glazed and heated through, turning and basting occasionally with the reserved sauce. (For a gas grill, preheat grill. Reduce heat to medium. Place ribs on grill rack directly over heat. Cover and grill as above.)

*Tip:

Fresh chile peppers contain volatile oils that can burn your skin and eyes, so avoid direct contact with them as much as possible. When working with fresh chile peppers, wear disposable plastic or rubber gloves. If your bare hands do touch the chiles, wash your hands and nails thoroughly with soap and hot water. If you get chile oil in your eyes, flush them with cool water.
