Would you believe these loaded breakfast sandwiches can be made in just one skillet? No matter how much of a rush you're in, you definitely have time for this 20-minute, one-skillet breakfast sandwich.
In a shallow bowl whisk together two of the eggs and the milk. Dip bread slices into egg mixture, coating both sides (let bread soak about 10 seconds per side). In a 12-inch skillet melt 2 tsp. of the oil over medium heat. Add bread slices; cook 4 to 6 minutes or until golden, turning once. Remove from skillet and keep warm.
In same skillet melt remaining 1 tsp. oil over medium heat. Break remaining four eggs into skillet; reduce heat to low. Cook 3 to 4 minutes or until whites are completely set and yolks start to thicken, adding Canadian bacon the last 2 minutes, turning once. For fried eggs over easy, turn eggs and cook 30 seconds more.
Spread bread slices with jam and top with cheese, Canadian bacon, and fried eggs. Sprinkle with basil and season to taste with salt and pepper.
